Late morning grub

I love sleeping in ❀Those morning where you brew coffee and make breakfast without stumbling like a rushed zombie in the kitchen. Skillets have always been my favorite breakfast. Cast iron pan, crispy potatoes paired with my fave veggies is a combination of dreams.

5 small diced potatoes

1 cups of roughly chopped mushrooms

1 diced onion

1 package of chopped bacon

2 cups of spinach

2 tbsp crushed black pepper

I start out by boiling my diced potatoes in a pot of water. While those are cooking I saute my bacon and onions till crisp in a cast iron. The potatoes only take a few second to become soft so I drain them off and toss them into the hot skillet sending up a roar of steam and sizzle! I toss all remaining ingredients into the pan and wait for the spinach to wilt from the steam and I serve! Such a fast and filling breakfast that everyone loves. Feel free to add other veggies or cheese on top once it’s finished! 🍳
